Is there any way to prove that a photo has defo not been photo-shopped / altered / etc ?

Some photo's have the exif data embedded (image owner prerogative) If you can extract this data, this will give you your answer.

If no exif data is not available, then a half decent photographer with a keen eye will be able to see if it's been altered in PS, via various methods and what to look for.
